If you are looking for hot action on a hot Summer weekend, then head offshore from Mississippi's mainland and partake in the Gulf of Mexico's "big dance."  All of the prime time players will be there including amberjack, king mackerel, red snapper and cobia.    Of the offshore fishing species, these are the most pursued.  Each of these fish species possess specific fighting abilities that can test the patience and stamina of the most seasoned angler.

The mighty amberjack is a deep-dwelling and tremendously hard fighting offshore bully.  To locate these back-breakers, Strictly Business Fishing Charters seeks out oil rigs and wrecks starting in 130 feet of water or better.   To catch the largest and wiliest of the pack, the captains of Strictly Business Fishing Charters drop down a large, live hard tail.  The angler must be prepared for a gut busting, relentless arm-wrenching vertical tug of war. 

Another prominent species and deep water dweller is the crimson hued red snapper,  Noted for its excellent table fare as well as its gorgeous red coloration, red snapper are plentiful in the Gulf of Mexico during July.  Like the amberjack, red snapper are structure-oriented fish.  Red snapper can be caught off wrecks, man-made fish havens and oil rigs in 60 to 200 feet of water. 

Dead baits like cigar minnows, menhaden, squid and a fresh chunk of bloody bonito will entice most red snapper.  However, live offerings such as pinfish, grunts and croakers will often catch the largest and wisest of this species.

An ever-popular midsummer offshore combatant is the cobia.  Capable of reaching weights of over 100 pounds, cobia are one of the most prized and revered catches in the Gulf of Mexico.  In July, cobia are often located around shrimp boats, wrecks, man-made fish havens, buoys and oil rigs.  These brown hued fish are somewhat inquisitive and are known for swimming right up to the boat.

Scavengers by nature, cobia will usually fall for a fresh dead squid, white trout, ground mullet, menhaden or croaker.  Even better, live baits are unsurpassed offerings for the "big brown ones."  The list includes eels, hardhead catfish, croakers, spots, crabs, pinfish, mullet and grunts.

Long, lean and built for speed, the king mackerel is another hard fighting species that is plentiful during July.  Although king mackerel can be caught over wrecks, under masses of bait fish and along rip tides, it is the oil rigs that assure the best chance of finding concentrations of these savage feeders.  Beware!  You will need steel leaders to prevent cut offs from their razor sharp teeth.

Either trolled behind a deep-diving planer or on a flat line, fake baits like feather dusters or sea witches sporting a cigar minnow or bonito strip are deadly on most king mackerel.  To fool the "smokers" - 40 pounds or better - Strictly Business Fishing Charters likes to slow troll with live hard tails.
